listening: Bible in a Year with Father Mike

  I started listening to the Bible in a Year with Father Mike last year. I wasn't sure what to expect at first, but it turned out to be such an amazing journey that I've continued listening to it from time to time this year as well.  For me, the Bible has been a living book, a book that has provided me new insights during different phases of my life. There have been times when I didn't understand what I was reading, and there have been times when matters have never been clearer. I have read many different versions of the Bible, and it has been a learning experience every step of the way. Even before the dawn of social media, people have been trying to throw scripture verses at others to influence them one way or another. What's Cooking: rotisserie chicken and more

  Another quick meal idea is rotisserie chicken from the store. Of all the rotisserie chickens we've tried over the years, we like the rotisserie chicken from Costco and Walmart. In addition to the chicken, we like to get the french bread and the caesar salad from Costco. For Walmart, we like to get the Hawaiian rolls and another side like potato salad to go with the chicken. This is especially helpful when we're traveling. The family gets a hearty meal, and the cost is better than eating out at a restaurant. For home, when you’re done with the chicken, be sure to save the bones for broth and whatever leftover chicken for another meal later. I like to use the broth for chicken soup, and depending on how much left over chicken there is, I use it for chicken and broccoli pasta. 

What's Cooking: New England Clam Chowder

Ingredients: 1 can chopped clams 1/2 cup diced bacon 1 cup diced onions 1 cup diced celery 2 Tbsp. flour 2 cups peeled and diced potatoes 2 cups milk 3 Tbsp. butter 1/2 cup chopped parsley 1 cup of water Saute bacon with butter. Then add in onions and celery.  Add clams, potatoes, and water next. Mix flour with milk until the mixture is not lumpy. Slowly pour in flour and milk mixture and let it simmer until potatoes are tender. Be sure to stir from time to time so ingredients do not stick to the bottom. Stir in parsley when ready to serve. Add salt and pepper to taste.

(St. Ambrose of Milan) The Apostles Creed is a proclamation of our Catholic faith. It is indeed a treasure, as St Ambrose stated above so eloquently. The world is filled with an immense amount of scandalizing bits here and there, but Father V's twitter account provides great insights and uplifting messages in the midst of it all.
