What's Cooking with Costco? Vol 1: Grilled Chicken Fettuccine Alfredo

Bonus post for this week: This is not a meal-to-go like an earlier post. You actually have to turn on the stove and get some pots and pans out, but it is still simple enough after a busy day.     What you need: fettuccine alfredo sauce grilled chicken mushrooms (optional) You can get all these items at other places, not just at Costco, but the bulk pricing and selections at Costco makes this a great meal at a decent price to feed a family. (I'm not affiliated with Costco, other than I shop there a lot, obviously.) Follow the directions on the fettuccine package. Costco has these in the refrigerated section, but the pantry fettuccine will do fine. The mushrooms are optional. For this meal, I used a can of mushrooms, but either fresh or canned mushrooms will work depending on what you have and what you can find. Heat the mushrooms with a jar of Rao’s Alfredo sauce in the pan. I used one jar per package.  The Costco size for both the fresh fettuccine as shown in the image

Watching: football

  Over the holidays, my family and I wanted to watch some bowl games on TV. A couple of our favorite college teams made it to the playoffs, and to our surprise, many of the games were not on broadcast TV. The games were on another streaming platform.  Add yet another streaming platform that we don’t have, even though we already have some platforms to begin with. I don’t know about you, but I’m suffering from subscription fatigue. This is getting out of control. We’ve been watching football on and off, but lately, I’ve been trying to figure out whatever happened to football. In college football, we were trying to understand all the drama with the transfer portal. In the NFL, we’re trying to find which channel and which days, just to watch some football. Then there are the gambling ads, what’s up with all the gambling ads. Between the gambling ads and the pharma ads, it’s making me miss a glass of ice cold Coca-Cola and a bag of potato chips. Costco meal-to-go

  A bonus post for this week ... I’ve mentioned this before, but it’s still our quick go to meal, so it is worth mentioning. The price is good for the amount of food you get, and I think it's more nutritious than some of the fast food out there. I also have some ideas from last year’s post on what to do with the left over chicken, such as chicken soup. If nothing else, save the bones for broth.

Some dates to keep in mind, Lent 2024

  This year, Easter comes early, so here's a list of dates to keep in mind in order to help you prepare and get organized. Easter is actually at the end of March this year. If you thought Easter was early last year, it is very early this year, in March! This means Ash Wednesday is in February and thus, Lent.  Here are some things to ponder on and pray on (this is from last year' post): As we approach the penitential season of Lent, let's start reflecting on how we can better prepare for it:     - what to give up for Lent     - what Lenten meditations to consider (any books to get beforehand?)     - start thinking about meatless meals options (getting some recipes ready?)     - how to prepare the family for Lent     - as always, put God first

Happy 2024

  Happy New Year, readers. It’s a new year, but it’s still the same old me except another year older.  I’m old enough to remember not to make any resolutions because most often than not, I end up setting myself up to fail.  Instead, my focus this year is simply to be better and live up to the potential that God has planned for me. Some days those plans are not so clear, and some days, if I see it, I will know it.  What the future holds, I don't know. I do hope and pray for the grace of God throughout this coming year. Wishing you a happy new year, and thanks for joining me on this journey again.

Journey Down Memory Lane: Mount Rushmore

Before the pandemic, we took a trip to Mount Rushmore one year. Years later, we still talk about what a wonderful trip it was.  Here we are getting in line to drive into the park. We went during off-peak season, but it was still busy, just not as busy compared to peak season. There's Mount Rushmore from a distance. We were still far from the monument after first entering the park, but we're excited and filled with anticipation. This is the walk down the path with all the flags, towards the monument. At this point, we're about to burst with excitement. How soon before we actually get close to the monument. And there it is, tada! Mt Rushmore!!! It was even more impressive in person.  We finally got close to the monument, but my photos didn't do it justice. It was indeed as magnificent as we imagined.
